Tarbais bean/Cassoulet Part 1

Here is what Tarbais (pronounced Taar bay) beans looks like on the vine and closeup, after dried but before shelling and when shelled in jars. I like to cook and wanted to learn how to make a french dish called ‘Cassoulet’ last year (2012) and had a heck of a time finding this particular bean that hails from France where I would have to pay $34.00 an ounce for heirloom Tarbais beans ! That’s because our USDA and the cost of their inspections drives up the price to get them into the US. The ones to grow can be different from the beans to eat. The ones you can purchase to eat might not be a true heirloom, mixing genetically with other beans but they will taste the same unless you try to grow them out.  The heirloom variety were not in any seed catalog last year but I finally found 4 people who offered their heirloom seeds through Seed Savers Exchange (SSE) in their Members Catalog ($4 for shipping only) and each gave a lot of beans (30+). Well worth joining because 1) you are supporting growing heirloom seeds and 2) many people grow unusual vegetables and offer their seeds through SSE. They were the only ones who had them in 2012 in the US. This year (2013) I saw them offered at Baker Heirloom Seeds in their catalog and got more although now I have my own supply of them as well.

So what’s so special about the Tarbais bean? I probably could have used a white Navy bean but I read that the Tarbais bean is slightly bigger and becomes creamy without disintegrating and becoming mushy like many other beans do and I wanted to be authentic and grow out that variety of bean.

The Tarbais bean originally came from the village of Tarbais, in southwestern France and is used in cassoulet dishes. Tarbais beans were developed by generations of farmers that lived in that area. The Tarbais Bean in 2000 obtained IGP status (Indication of Protected Geographical Origin). Only members of a small, closed cooperative in Tarbais are allowed to use that name for their beans, and production is tightly regulated. The original seed is a New World runner bean (Phaseolus coccineus) and most think it originated in Mexico.

That’s one of the great things about growing your own vegetables-you can grow something you might not find in the grocery store. That doesn’t mean it will taste exactly the same as where it originated from (like I doubt a New Mexico chili grown in New Jersey would taste the same as our conditions and soil are very different) but at least I could try. The beans are grown like any pole bean that you are going to leave on the vine until dried. They were harder to start as the birds liked the ‘bean sprouts’ when they popped up so I had to replant several times and cover them with row cover to protect them until they were about 3 inches tall. After that it was a breeze. Just water them regularly. They will produce many pods that you just leave on until fall when they dry on the plant.

Seed Starting Date Calculator

Below is a seed starting date calculator from Johnny’s Seeds. I downloaded it from the interactive tools section on their home page. I put the date of our spring frost-free date (May 15 in the Santa Fe area) and it automatically put in all the dates from when to start seeds inside to when we can safely put the plants out in our gardens. I just copied the vegetable section here for you to see but it also has many flower planting dates as well-it was just too big to capture it all. If you live in another area or want to capture the flower information as well, then be sure to go to the interactive tool section at Johnny’s to get your own. Why start vegetable seeds inside?

Why would any of us bother to start seeds when we can go to nurseries to buy the plants. Well, I do both. I can only speak for myself but I have grown all kinds of unusual vegetables that I couldn’t find at the nursery and I like to try something new and different every year. Besides being ‘The Tomato Lady’ here at the Santa Farmers Market, I really like to try some new heirloom tomatoes every year along with my tried and true varieties. Every year some new variety gets on my ‘all-star’ list at the end of the season while others don’t make the cut. In fact in some years, many don’t make the cut-I’m picky as hell about my tomatoes. If I don’t like them I don’t grow them again. Luckily, I like many tomatoes but they’ve got to taste good!

Some of the unusual varieties I have tried and loved eating are Atomic Red carrots, Cosmic Purple carrots, Craupadine Beets, Tarabais beans, Rattlesnake beans, Emerite beans, Fava beans, Parisian cucumbers, Poona Kheera cucumbers, and about 25 different varieties of heirloom tomatoes (too many to mention). None of these are sold as plant starts in the nurseries but you can buy some of the seeds at the nurseries and some seeds you have to order online.

Have you ordered your vegetable seeds?

seed catalogs 2011Looking through all the seed catalogs and planning what you’re growing next year is fun to do in winter. Now is the time to order your vegetable seeds if you haven’t already done so. Seed starting will soon be upon us! Many cool season crops can be started inside soon (some now) and put out in March and warm season crops can be started from seeds inside 6-8 weeks before the first frost-free date. Hard to think about starting any seeds when the weather is cold, windy and ugly but it is almost here. I have ordered some seeds but still have to get some and already feel a little behind.

If you are not one to start seeds inside, that’s ok-just wait till the nurseries get their transplants out later this spring and let them do the work for you. And don’t be afraid to buy transplants. I once was told you’re not a real gardener unless you grow everything from seed. Bull@#$%! Out here we need all the help we can get so I’m not against buying plants from nurseries at all. Besides I like supporting our local economy as well. So I grow some vegetables from seeds and buy some from the nurseries. What matters is that you get out in your garden and enjoy yourself and the fruits (or vegetables) of your labor.

10 more things to Do in February For the Garden

We may not be able to get out in our gardens now but it is time to get busy with things to do to get ready for the garden. March will be seed starting time and there will be lots to do before for that. I will be elaborating on some of these items over the next few posts as I see there is more info I can offer.

1. Go over your current seed supply. Organize it. Get rid of any seeds over 3 years old unless you froze them. Fresh seeds are essential for good germination. Older seeds have less success of germinating.

2. Decide which vegetables you want for this year and order any seeds you may need to get from seed catalogs.

3. Talk to your local nursery to see what they might be growing this year. I give a list to mine and they tell me what they are growing so I don’t duplicate. I prefer to let them do the growing, it’s just that I want to grow so many varieties that they might not have so I have  to start some by seed.

4. Stock up on any fertilizers, amendments, compost, nutrients, mycorizzial, and biomicrobes you may need for veggies. i.e- tomatoes, giant pumpkins

5. Check your grow light boxes to make sure they work. Get new bulbs if necessary.

6. Check grow heating mats to make sure they work and get more if necessary. Last year I had one and ordered another as my seed growing expanded.

7. Consider purchasing a seed mat thermostat. Last year I had to get one because the seed heating mats were running too hot and burning up the seeds before they have a chance to germinate. The mats stay 10° F hotter than the ambient temperature of the room so if we are having a really warm spring and the temperature is 80° F inside than the temperature would run 90°F in the seed flats-way too hot. The thermostat will keep the temperatures in the pots at whatever is best germinating temperature.

7. Purchase soil seed starting mix. I use Metro Mix 100 to start seeds. This stuff is great. The water doesn’t roll off the ‘dirt’ like many seed starting soils

8. Clean and sterilize any containers you plan to reuse for seed starting or transplanting seedlings. Use a 10% bleach to water ratio to rinse off the containers.

9. Buy any containers you may need for seed starting/transplanting. Most gardening stores sell up to 3″ in the peat pots. If you want a 4″ peat pot, go to Territorial Seeds. They are the only ones that have that size. I need them for my giant varieties cause they grow so fast. I also like the flats that have a raised lid. good for germination.

10. Read at least one good gardening book your interested in each month during the winter. I’m almost finished with ‘Four Season Gardening’ by Eric Coleman and just ordered ‘The Compost Tea Brewing Manual’ by Elaine R. Ingham.

Seed starting INSIDE

I’ve been planting seeds INSIDE for a couple of weeks now. Here is my update on my seed starting endeavors this spring so far.

PEAS-Not everything is successful-My pea seeds I planted inside have NOT done well as I had hoped. They are barely coming up now inside so I planted more outside and if these make it, I will add to the other seeds that I planted outside on Saturday. I think the heating mat was too hot for them so I put them on a table under the lights but with no heat. We will see..

FAVA BEANS-I’m so excited-I’ve never grown fava beans before but are trying them this year. I sprouted fava beans that I got from that Homegrown seed swap and bought some more that I got from Spanish Table Market here in Santa Fe. The companies would like to say that the ones they sell you to eat are different then the ones they sell you to grow.  If they are treated then that would be true but so far I have not found that to be the case. They are both sprouting just fine. Today I saw three of them breaking ground in their little pots on the heat mat under the lights. Once up I will transplant them outside as they like the cold. I’ll talk about them later.

The next major inside seed starting will be in 2 weeks-Basil, oregano, marjoram, zinnias and probably a lot more.

The Mystery of the Calabacita Squash

As a gardener and a cook, I’ve been searching for a particular squash seed-the Mexican Calabacita. It was the original squash used to make the famous ‘Calabacitas’ dish of squash, corn, onions and green chili here in New Mexico. Most of us now use zucchini to make this savory dish because of it’s availability, but here at the Santa Fe Farmers Market, you can buy the Calabacita squashes in early summer and then by mid summer, they are gone. They are little green squashes with soft skin and teeny weenie seeds-too small to harvest. I researched it and found that the squash originally came from Mexico but not a lot of information is out there on it. No seed catalogs have it. None of my gardening friends have any seeds. I couldn’t find it anywhere.

Then two years ago while on vegetable gardening forum here in Santa Fe, I met another gardener and during the course of our conversation after the forum, the mysterious Calabacitas squash came up. I told her of my difficulty finding the seeds. She told me she had gotten some Calabacita seeds from another farmer whose family had been here for generations.  She offered me a few of the seeds. Finally I would get some seeds! So we emailed each other and I sent her an envelope to send me some but they never came. I went by the Farmers Market where she sells produce but we kept missing each other. Another season passed and still no seeds.

This year, on the last day of my season as ‘The Tomato Lady’ at the Farmers Market where I sell heirloom tomatoes, I went by her booth and mentioned maybe I could get some of those seeds for this upcoming season. She said,” Why not buy one of the squashes now?” When she pointed them out, I said, “That’s one of them? It doesn’t look anything like the ones earlier in the season” and she remarked, “Yes that’s one of them. They are actually a type of WINTER SQUASH. We just pick them when they are really young and immature and have no seeds”. That explains it! Why I could never get any seeds from them. That is why we don’t see them later on in summer-if you let it keep growing; it will become a mature winter squash. There were several there at her booth with different colors. Some were green with orange stripes and some were salmon color with green-grey stripes. She said there really wasn’t any difference in the taste.  I ended up with the salmon-green striped one. It weighed about 15 lbs and has a squat oval shape outside and lovely orange color inside. It smelled like a cross between a cucumber and a melon.

I got the seeds and roasted the squash. To roast it, I quartered it and rubbed some oil on it and put it on a cookie sheet. Then I added a little water in the bottom of the pan so it wouldn’t dry out. I put it in the oven at 350° and placed some aluminum foil loosely over it so it would not burn. It took about an hour to cook. Afterwards, I put the flesh in a freezer Ziploc and will later cook squash lasagna with béchamel sauce.

So Calabacita squash can be used to make Calabacitas in early summer or later in the fall used in winter squash dishes.

Here is a recipe for Calabacitas from New Mexico:

1 lb or more Calabacita squash or any summer squash, cubed

3-4 ears fresh corn cut off the cob or 1 can corn

1 chopped onion

cumin to taste

New Mexico green chili to taste

Sauté the onion, add the squash and corn and sauté till tender.

Add cumin to taste. Add New Mexico green chili to taste.

Last evening I planted my tomato seeds-both heirloom and hybrid seeds. I brought out and set up the light boxes and heating mats last week. Before planting my seeds, I always clean the little pots with some bleach water that I use for starting tomato seedlings. It’s important to disinfect the pots because you don’t want your plants to pick up any soil borne diseases. I use about a 10%  bleach to water ratio.  I use the kitchen sink and try to not get dirt everywhere from the used pots. The trick is to convince your partner that it is ok! Just tell them you are disinfecting the sinks out (which is true)! I picked up the seed starting soil-Metro mix 300 from Agua Fria Nursery last week. It comes in a big bag but you will be planting up into larger containers in a few days after the second set of true leaves appear and besides if you have any left over, you can use it for next year. I’ve bought many seed starting soil mixes (usually at the big box stores) and hate the way the water rolls off of the soil when you first go to use it. With this soil mix (Metro Mix 300) I just plant the tomato seeds about 1/4 inch deep and water it all at once. It saves time and anything that saves time I like!

After I water the seeds, I put them under my lights and on top of a heating mat which is great for warming the soil for the seeds to germinate. I’m starting the tomatoes later this year because last year I started the first week of March and they got too big-about 3-4 feet tall because I couldn’t put them out with the cold spring we had.  This year I’m hoping to get them transplanted into the garden around mid April (with protection) weather permitting. Why do I think I might be able to get them in early this year? We are in a La Nina which generally means warmer weather in spring but less rain. By planting them later if I have to, they shouldn’t be as big as last year.

10 Things to Do in March in the Garden

Now is the beginning of our season for fruit and vegetable gardeners. I got my light boxes out! Woo! Hoo! Here we go! Here are 10 things to do for or in your garden this month.

1. Finish ordering your seeds or getting your seeds if you haven’t already.

2. Get your light tables and heating mats out and ready to go. Use florescent lights that are at least 3000 lumen. I use the daylight ones. They produce less ‘leggy’ veggies.

3. Start tomato, pepper and eggplant seeds indoors to set out later as transplants depending on variety.

4. Finish your garden plans

5. Get your soil tested to see what amendments you might need to add to it.

6. Put  horse manure that has been aged for at least 6 months on your garden beds and dig in. Don’t put on ‘hot’ manure.

7. Hurry up and finish pruning your fruit trees. Not much time left.

8. Spray your fruit trees with dormant oil before their buds turn color to smother any dormant bugs.

9. Water your trees.

10. Plant COOL SEASON vegetable seeds OUTSIDE on ST. PATRICK’S DAY.  Some varieties include carrots, beets, lettuces, spinach, arugula, bok choy, swiss chard, onions, brocolli, cabbage, peas, radishes, mustard, kale and other greens.

Still Time to Order Seeds if You Haven’t Already

Still time to order seeds if you haven’t already. I need to order my seeds Monday, now that I’m home from the show so I get them in time to plant in March. Probably most of you have already order your seeds. I only need to order a few as I still have many seeds that I will regrow this year. It feels late but it is what it is. Last year I started the seeds the first week of March. Because it was such a cold spring, I couldn’t get them out till late May and even June last year They got too tall in the house, but what was I to do? Stick them out in 27°F weather? I’m still going to plant seeds from March 1 -15,  inside, under the lights and hope with this La Nina we have that all of us will be able to sneak out some of our warm season crops early—think April 15th! It’s always a crap shoot when trying to decide when to plant seeds but I’m going early! Bring out the gro lights! (I hear, “oh no” in the background!) I do have ‘plant envy’ for those of you have greenhouses or hoophouses!
